DIY: Cookie Waffle with Apple Spice Ice Cream

After discovering on good ole’ Pinterest that you can make a cookie in a waffle iron online, I had to give it  try and sure enough it worked…well after a few tests to get the process right. Once I got the technique down, what resulted was a delicious cookie waffle that took just minutes to cook…my kind of cookie!  Although the title sounds fancy, I used mostly pre-made ingredients so I wouldn’t have to worry about starting from scratch. Materials Needed:

  • Waffle iron
  • Non-stick cooking spray
  • Spatula
  • 1 package chocolate chip cookie dough
  • Caramel topping
  • 1 scoop vanilla bean ice cream
  • Pinch of apple pie seasoning

 

Directions:

I first tried to make my cookie waffle by turning my iron on to high and adding the cookie dough once the iron was hot, but this didn’t work for me. So, next I tried it on medium heat and that worked, but it was still a tiny bit crispy on the ends. I found another tutorial on Buzzfeed that directed to put the cookie dough on the iron before turning on the heat, so for my third attempt I followed that method and found that it worked best. Third time’s a charm! All waffle irons will have different heat settings, so test out your iron by placing dough in just one of the sections before going for the whole thing, so that you can figure out what heat works best for your particular iron.

Step #1: Roll your cookie dough into small 1-1.5″ rounds and set aside.

Step #2: Spray both sides of your waffle iron with non-stick cooking spray. For a small iron like the one I used, I added 3 rounds to each of the four sections, but you may need more depending on the size of your iron. Once you’ve added the cookie dough, press down slightly on the balls to form them together.

Step #3: Close the iron, turn on the heat and cook for about 3 minutes. Time will vary across different irons and with different dough, so keep a close eye on it to make sure it’s not burning. To remove, run a spatula around the sides and then hold a plate over the iron, and filp the iron over onto the plate to neatly transfer the cookie.Serve as triangles or as a whole.

Step #4: Place a couple scoop of vanilla ice cream in a bowl and sprinkle on a large pinch of apple pie seasoning. Mix the seasoning into the ice cream. Drizzle some caramel over your waffle, top with a scoop of the ice cream, and enjoy!
