Taco Cookie Update

If you follow me on Instagram, hopefully you saw that Taco Cookie video I just posted. It depicts THIS original tutorial…so if you’re just looking for the directions for the Sugar Cookie Tacos, follow that link. However, before you head to the directions, I wanted to provide a few updates, as I have received some questions about the tutorial over the past couple of years, in particular about the cookie shells.

Here’s a few very important tips, that’ll help you achieve perfect cookies:

  1. Do not cook an entire batch of cookies at once. I was working solo, so I went with 3 at a time. If you cook too many at once, you won’t have enough time to get them all in the mold as they set within minutes once they’re ready.
  2. Under-bake the sugar cookies by 1-2 minutes. My cookies typically bake for 12 minutes at 350 degrees, but for the shells I bake them for 10 minutes at 350 degrees. They shouldn’t be golden yet, and it’s okay if they’re a tiny bit gooey!
  3. When you pull the cookies out of the oven, wait for 3 minutes before transferring them to a rolling pin or to the parchment-lined paper towel roll (a new method I tried out for the video!). If they break a little, that is A-OKAY…since they’re still soft, you can remold them into shape before you let them set.
  4. Once they’re in the mold, instead of waiting for the shells to set at room temp, place them in the freezer. So if you’re following along with the video, gently position the paper towel cookie holder in the freezer once all the cookies are in place. And if you’re following along with the original directions, gently place the rolling pin (with the cookies in place) in the freezer.

And lastly, one direction that I changed but don’t show thoroughly on the video is the paper towel mold. To make that, cut a paper towel roll in half lengthwise and line the interior with parchment. That will serve as your mold for the cookies. You can also use a silicone rolling pin (like I have in the past), both work equally well.
