Fruit and Yogurt Breakfast Popiscles
Taking the time to eat a healthy breakfast at home can often seem like a task in itself. Because I often can’t find the time to make myself a nutritious breakfast, I wanted to create some healthy breakfast recipes that work on the go and can be made the night before. And with that, I present you with the Breakfast Popsicle. Because having a chilled, refreshing AND nutritious breakfast on-the-go is exactly what I dream of in the summertime. Loaded with fruit and made with yogurt and coconut milk, these breakfast pops can do no wrong. I experimented with a bunch of different fruit recipes including: watermelon, strawberry, kiwi, dragon fruit (aka pitaya), pineapple, and more. Below you’ll find 3 of my favorite recipes. Enjoy!
FRUIT AND YOGURT BREAKFAST POPSICLES
1. COCONUT AND PINEAPPLE YOGURT POPSICLE:
Ingredients Needed (makes 6 popsicles):
- 3 cups pineapple, roughly chopped
- 1.5 cups coconut yogurt
- 1/4 cup coconut milk
- 2 Tbsp agave nectar
Step #1: Roughly chop 3 cups of pineapple. Add pineapple into a bowl and set in the fridge for 15 minutes to chill.
Step #2: Remove chilled pineapple from fridge and drain juices into a separate mixing bowl. Add coconut yogurt, coconut milk, and agave nectar to bowl and whisk to combine with the pineapple juice.
Step #3: Arrange 6 popsicle molds. Into each mold, alternate spoonfuls of yogurt and chopped pineapple until you’ve filled each mold. Lightly tap molds against counter to let out any air bubbles.
Step #4: Position a popsicle stick into the center of each mold. Set popsicles in the freezer until solid (at least 5 hours). Once frozen, remove popsicles from mold and enjoy! If you’re having difficulty removing the popsicle, just run the bottom of the mold under warm water for a few seconds before pulling it out.
2. KIWI AND YOGURT POPSICLE:
Ingredients Needed (makes 6 popsicles):
- 6 kiwis, peeled and sliced
- 1 cup Greek yogurt
- 1/2 cup skim milk
- 3 Tbsp honey
Step #1: Peel and slice kiwis, cutting a few clean horizontal slices as well as some smaller, chopped kiwi pieces. Set aside.
Step #2: Add yogurt, milk, and honey to bowl and whisk to combine.
Step #3: Arrange 6 popsicle molds on your countertop. Into each mold, alternate spoonfuls of kiwi and yogurt until you’ve filled each mold. Lightly tap molds against counter to let out any air bubbles.
Step #4: Position a popsicle stick into the center of each mold. Set popsicles in the freezer until solid (at least 5 hours). Once frozen, remove popsicle from mold and enjoy! If you’re having difficulty removing the popsicle, just run the bottom of the mold under warm water for a few seconds before removing.
3. COCONUT AND DRAGON FRUIT YOGURT POPSICLE:
Ingredients Needed (makes 6 popsicles):
- 1 large dragon fruit, cubed
- 1 Tbsp agave nectar
- 1.5 cups coconut yogurt
- 1/4 cup coconut milk
- 2 Tbsp honey
Step #1: Peel and cut dragon fruit into small cubes. Add to a bowl and mix with agave nectar (or 1 tsp sugar). [Note: I found my dragon fruit to not be very sweet, hence the addition of the agave nectar. However, if your dragon fruit is sweet and riped to perfection, skip the agave nectar]
Step #2: In a separate bowl add coconut yogurt, coconut milk, and honey to bowl and whisk to combine.
Step #3: Arrange 6 popsicle molds on your countertop. Into each mold, alternate spoonfuls of yogurt and cubed dragon fruit until you’ve filled each mold. Lightly tap molds against counter to let out any air bubbles.
Step #4: Position a popsicle stick into the center of each mold. Set popsicles in the freezer until solid (at least 5 hours). Once frozen, remove popsicle from mold and enjoy! If you’re having difficulty removing the pop, just run the bottom of the mold under warm water for a few seconds before removing.
