NYE Disco Ball Cupcakes
I’m feeling a bit depressed to be posting a New Year’s Eve dessert, because it means the most magical time of year is over. UGH. SUCH. A. BUMMER. But, I’ll find a way to deal with it. And honestly, eating some cupcakes might help. I made these DISCO BALL CUPCAKES for A Beautiful Mess (you can find the how-to for them HERE), which I thought would be perfect for those of you hosting or attending a New Year’s Eve party.
I was inspired to make these because while I had seen plenty of disco ball desserts in years prior, I had become a little disappointed because most of them seemed to just be some dessert COVERED in fondant. You know how I feel about covering desserts in fondant (if you’re new here, I am not a fan). A cake shouldn’t be approached like a banana, you shouldn’t have to peel it before you eat it! I wanted to make some disco ball cupcakes that were formed just with buttercream, so that’s what you’re seeing here. No peeling necessary….just bite on in!
